Chile, ¿potencia alimentaria?
Luego de trabajar en Fundación Chile e Innova Chile en temas que relacionaban a las Tecnologías de Información con el rubro alimentario, y de pasar algunas temporadas aprendiendo en teoría y en la práctica sobre salmones, mitílidos (choritos), uvas, etc., adquirí ciertas distinciones respecto del tema y del sector. Y viviendo en Estados Unidos, cuando me enfrento a las góndolas del supermercado disfruto al ver chilean fruit (duraznos, manzanas, uvas). Su colorido y textura me hacen augurar una experiencia exquisita que me acerca un poquito a casa y a los sabores del verano chileno, mientras nuestra primavera todavía ofrece uno que otro día de lluvia, e incluso alguna nevada.
Sin embargo, ya en varias ocasiones me he llevado una mala sorpresa al llegar a casa y probar un bocado de aquella fruta soñada. La uva muchas veces está ‘pasada’, casi al punto de ser ‘chicha’ (fermentado de uva), y cuando tiene la consistencia adecuada, está ácida, carente de azúcar. Por otra parte, y tal vez aun peor que lo anterior, los nectarines casi siempre están malos. No sólo se trata de que estén muy maduros o que estén sin sabor o poco dulces. Se trata de un problema de apariencia en su carne, un oscurecimiento debido a daño por frío en su manipulación post-cosecha.
Según explica de manera bastante clara un artículo de University of California Davis (donde un grupo no pequeño de chilenos se ha especializado), la degradación interna o daño por frío es un problema fisiológico que se caracteriza por un pardeamiento interno de la pulpa, harinosidad del tejido, la aparición de tintes rojos en la pulpa, incapacidad de maduración y pérdida de sabor. Estos síntomas se desarrollan durante la maduración, tras un período de almacenamiento en frío, por lo que usualmente son detectados por el consumidor. La fruta más susceptible a este problema es la que se almacena dentro de un rango de temperaturas de 2.2 a 7.6°C.
Tal vez no todos lo sepan, pero Chile se ha fijado la meta de ser una potencia alimentaria y diversificar la matriz exportadora, concentrada actualmente en recursos naturales no renovables como la minería. La aspiración concreta es ubicarse en los próximos años dentro de las diez primeras naciones exportadoras de alimentos del mundo (hoy ocuparía el lugar 17). Los rubros con mayor potencial son la fruta fresca, los salmones cultivados, los vinos, los alimentos procesados, las carnes, y otros productos del mar. Considerado todo el sector alimentario, estaríamos hablando de exportar unos US$17 mil millones hacia el Bicentenario y más de US $20 mil millones para el 2015. En términos de impacto, se espera duplicar el empleo registrado en la agricultura, al igual que las inversiones y la actividad en todos los servicios relacionados.
Las iniciativas relacionadas con la consecución de esta meta normalmente quedan ocultas a los ojos del ciudadano común, y tal vez lo único que perciban las personas que acceden a los noticiarios y a la prensa sean actividades como Los Sabores de Chile realizadas en Nueva York, México, Unión Europea, etc. Sin embargo tras ella hay muchas instituciones: Fundación Chile (donde yo escuché el concepto por primera vez), ASOEX, MINAGRI, FEDEFRUTA, SALMON Chile, Innova Chile de CORFO, etc.
Sé que en Chile existe el conocimiento y la experiencia para manejar esta situación, y dicho conocimiento va mucho más allá de saber armar muestras gastronómicas alrededor del mundo, o de tomar buenas fotografías, por tanto no importa si el daño se produce en Chile, durante el transporte, o en el manejo que se hace de la fruta en los mercados de destino, los responsables somos nosotros, los chilenos, o mejor le quitamos la etiqueta que los asocia con Chile, y nos olvidamos de una vez por todas de proyectarnos como una potencia alimentaria.

A mí me gustaría hablar como consumidor de agroalimentarios chilenos. Yo vivo en España y he notado desde hace algunos años el aumento de fruta que es de temporada fuera de su temporada, me explico. Las ciruelas, melocotones, cerezas etc son fruta de temporada que sólo se dan en unas épocas del año y ahora resulta que la hay todo el año. La mayor parte de esa fruta de temporada que se vende fuera de temporada es chilena y supongo que es porque las estaciones no coinciden con las de aquí. Una vez dicho esto he de escribir que si he notado la congelación o demasiada refrigeración de la fruta y se puede pensar que será para que aguante todo el tiempo desde su cosecha hasta que es puesta a la venta en España, que por cierto tiene una atracción visual estupenda. Pero ya llegué a la conclusión de que tiene que haber otro motivo, puesto que la fruta española que también hay y en cantidad (por algo somos considerados la huerta de Europa) llega en las mismas condiciones, muy aparentes por fuera pero semicongelada por dentro.
Por cierto, sólo iba a hablar de frutas y voy a acabar hablando de vino. Hay una serie de vinos chilenos que son vendidos en España y supongo que en toda Europa en una cadena de supermercados (tipo descuento) alemanes llamado Lid'l. No discuto la calidad de los productos que venden en dicho supermercado porque francamente no la se y supongo que no difiere en mucho la de los otros. En el supermercado en cuestión casi todos sus productos son marcas blancas a precio bastante bajos y en concreto el vino en cuestión está hecho especialmente para supermercados Lid'l pero creo que el problema es que en la etiqueta pone bien grande la palabra Chile y bueno, creo que cualquier cosa que se pueda asociar con el supermercado sencillamente no se puede asociar con calidad. En definitiva que no es el mejor escaparate.
